I love baking! I found this recipe a couple of years ago and the first time I made them they were so good and moist! Also, I’m all about simple when it comes to ingredients.
- Yellow cake mix (I guess I should call these banana bread/cake muffins!)
- 3-4 OVER-ripe bananas. You want them kind of on the gooey side. It sounds worse than it is, trust me! ; )
- 2 eggs
- chocolate chips or walnuts – sometimes I had either of these and sometimes I don’t. I personally love these with the walnuts!
Add cake mix and eggs together and smooth any lumps. Then add in your banana mix and/or chocolate chips or walnuts. Make sure all ingredients are mixed well and then pour into your mini loaf or muffin pan.
Bake on 350 for 20 minutes (depending on your oven) and then bam! you’re done and they are delish!!
Bananas should be mashed pretty thoroughly and into a gooey mixture.

Fill your pans a little over half way full..
and then enjoy ; )
